You can use honey in both sweet and savoury dishes. It is incredibly versatile, and depending on the honey that you use, you can create a huge variety of different tastes.

Try simply coating a ham in honey and lemon juice, or mixing honey with natural yoghurt for a quick pud! Honey Roast lamb is quite delicious as are Pork Chops.

In cakes, you can replace some of the sugar used, with honey. Reduce the other liquid, and you will have a really healthy cake.




Honey and Lemon Curd

To put onto freshly baked bread of course!!

4 lemons; 4oz butter; 1lb Honey; 4 eggs.

Grate lemons and squeeze the juice. Place into a double saucepan with the butter and the honey. Beat the eggs and add to the mixture. Cook over a gentle heat. Keep stirring until it is thick and creamy. Pour into hot, sterilized jars, and cover.

 It will keep for up to 1 month, but in my experience, children eat it far too quickly!




Honey Dressing

 

This is great on fresh green salads or fruit.

 

4 fl oz balsamic vinegar; 2 fl oz honey; 2 tbs olive oil, seasonal herbs.

 

Mix all the ingredients together in a bottle. Shake gently before use. This will keep for a week.
